Linguine with prawns, chilli and herbs

Method

  1. Add water and salt to a pot.
  2. Put on a high heat and once it boils, place the pasta inside.
  3. Next, place a pan on high heat and add the olive oil.
  4. Once heated, add the shrimps and sauté until cooked.
  5. Remove from the pan and transfer to a bowl.
  6. In the same pan, sauté the chopped onion, the garlic and chili. As soon as they wilt, add the grated ginger.
  7. Then add the cherry tomatoes and mix.
  8. As soon as they wilt, add the white wine.
  9. At the same time, place the basil and a spoonful of the pasta water in a measuring cup.
  10. Blend with a hand blender.
  11. Once the wine has evaporated, put the shrimp back in the pan.
  12. Strain our pasta and add it to the pan.
  13. Mix very well and add the butter and parmesan.
  14. Finely chop the dill and parsley and transfer them to our pan.
  15. Next, add the basil paste we made and mix.
  16. Adjust the taste with salt and pepper and serve.
  17. Garnish with fresh rocket leaves and parmesan.

  • 250g linguine
  • 2-3 tbsp olive oil
  • 30g basil
  • 30g butter
  • 40g parmesan
  • 1 clove garlic chopped
  • 1 onion chopped
  • 10 pcs cherry tomatoes cut in half
  • Baby rocket
  • 150ml white wine
  • 1 chopped red chili
  • 10g grated ginger
  • 1 tbsp chopped dill
  • 1 tbsp chopped parsley
  • Salt
  • Pepper
