Pork chops with apple sauce

Method

  1. On a cutting board finely chop the fresh onion.
  2. In a baking dish marinate the steaks with the French mustard, olive oil, salt, pepper, cumin and the chopped fresh onion. Brush the steaks well with the marinade and massage lightly by hand. Let them marinate for at least 15-20 minutes.
  3. With a peeler, clean the apples, cut them in fours and remove the seeds. Then cut them into small cubes.
  4. In a saucepan add the butter and 1 tablespoon olive oil and put over high heat. Wait for it to foam and place the apples inside. Salt and add a bay leaf and a cinnamon stick. Stir often until caramelized and golden. At this point we add the vinegar and the sugar. Let them cook over medium heat and as soon as the apples absorb most of the liquids remove the bay leaf and the cinnamon stick. Transfer the apples to the blender's bowl and mash until you have the desired texture. We correct the taste with salt.
  5. In another pot add water and salt to boil the asparagus. On the cutting board we cut the bottom from the asparagus. Once the water is ready we place the asparagus inside and boil them for about 2 minutes. At the same time, prepare a bowl of ice and water and place the asparagus inside to cool. Once they have cooled, place them on absorbent paper to dry. Transfer them to a bowl and marinate them with salt and pepper.
  6. Preheat the oven to 200 C degrees.
  7. Place a grill pan on the fire and as soon as it is hot add olive oil. Place the steaks inside and sauté each side for 2-3 minutes. Transfer to a baking pan with parchment paper and finish in the oven for 10-12 minutes.
  8. Serve all preparations.

  • 4 pork chops, bone on
  • 2-3 tbsps olive oil
  • 4 tbsps french mustard
  • 1 tsp cumin, powder
  • 4 spring onions
  • 1 tsp salt
  • 1  tsp pepper
  • Oregano to serve

For the sauce

  • 3 apples, peeled and seedless, cut in cubes
  • 80 g white vinegar
  • 50 g granulated sugar
  • 1 cinnamon stick
  • 1 star anise pod
  • 30 g unsalted butter
  • Salt
  •  Pepper
