Method

For the syrup

 

  1. In a saucepan add the ingredients for the syrup except the honey.
  2. Boil over high heat for 10 minutes without stirring.
  3. Turn off the heat, add the honey and mix with a hand whisk. (Add the honey at the end so not to lose its nutritional values and aromas)
  4. Set aside to cool.

 

For the honey balls

 

  1. In a bowl add the lukewarm water, the instant yeast and the honey.
  2. Mix with a spoon and set aside until the yeast is activated for 4-5 minutes (until the mixture starts blistering).
  3. In a large bowl, add the flour with the salt. Wearing gloves and mix by hands.
  4. Gradually add the mixture from the yeast and work the mixture with your fingers until break the pellets created, for about 2-3 minutes.
  5. Once you have a smooth mixture, add the juice from the lemon and stir.
  6. To achieve the ideal shape and make the honey balls fluffy, take the mixture and forcefully pour it from above back into the bowl. In this way, the dough becomes fluffier as this way air passes into the mixture.
  7. When our mixture starts to produce small blisters, it is an indication that it is ready.
  8. Let it rest for about 1 hour at room temperature or for an evening in the refrigerator covered with cling film.
  9. Heat the oil to 180 °C degrees in a saucepan and using a teaspoon, cut the donuts. Every time toy cut a donut, dip the spoon in a glass of lukewarm water.
  10. Fry until get golden brown colour and mix circularly with a slotted spoon continuously.
  11. After they have been cooked, remove from the oil with a slotted spoon and put them in the cold syrup for a minute.
  12. Serve with chopped walnuts.

• 250 g flour/ type 00
• 9 g dry yeast
• 1 tsp honey
• 1 tsp salt
• 1 tbsp lemon juice
• Sunflower oil for frying

• 50 ml honey
• 2 slices of lemon
• 2 slices of orange
• 1 cinnamon stick
