Beef ribeye steak with chimichurri sauce

Method

For the steaks

  1. Turn on the coals at the barbecue.
  2. Remove the beef steaks from the refrigerator to get room temperature.
  3. As soon as the coals are ready we place the grill to burn.
  4. Salt the steaks well on both sides with coarse salt.
  5. Once the grill is hot, place the steaks on top and bake on both sides for about 4-5 minutes, until you have medium baking.
  6. In a baking pan place a rack so that once we are done with baking we put the meat to rest for about 3-4 minutes. Add freshly ground pepper.

For the sauce

  1. Place all the ingredients of the sauce in a dispenser and mash them with a hand blender.

For the potatoes

  1. Cut the baby potatoes in half and place them in a small pot with water. Salt and boil for about 15 minutes. Strain and dry on absorbent paper.
  2. Place a frying pan on the grill or directly on the lit coals to heat it.
  3. At the same time, on a cutting board, finely chop the thyme and chives.
  4. Add a little olive oil to the pan and sauté the potatoes until they turn pinkish brown. Then add the butter and flavor with the chopped thyme and chives. We correct the taste with salt and pepper.
  5. Serve

  • 200 g potatoes, baby
  • 10 g thyme
  • 60 g butter unsalted
  • 10 g chives

For the chimichurri sauce

  • 100 ml olive oil
  • 30 ml lemon juice
  • 30 ml balsamic white vinegar
  • 100 g parsley
  • 30 g coriander
  • 10 g dry oregano
  • 1 pc of chili finely chopped
  • 1 tsp garlic
  • Zest of 1 lime
  • Salt
  • Pepper
